Here's the expert's recipe for a great cup of coffee:
Use good quality, fresh roasted coffee. Beans, preferably. Buy them often, in small
amounts, store them in an airtight container in the freezer and grind them yourself, just
before brewing.
Use cold water.
Methodology varies.
David Thompson of The Coffee Tree favours the French Press or Bodum method. "Use coarse ground
coffee. This is as close to 'cupping' as you can get, which is the 'wine tasting' of coffee."
David Wilkes of the Canadian Coffee Association swears by his filter coffee maker.
To keep freshly brewed coffee warm & fresh, decant it into a thermos as soon as it's brewed.
"That way, you can enjoy it throughout the morning", says Wilkes. "Don�t let it sit on a burner
for more than 15 minutes or it becomes bitter."
